This light and crispy Asian inspired Low Carb Cabbage and Fennel Salad recipe is the perfect side dish for this season. The healthy veggies and bright flavors make a beautiful addition to any table.

🥘Cabbage and Fennel Salad Ingredients

Dressing

  • 1 tablespoons olive oil
  • 1 tablespoon toasted sesame oil
  • 2 tbsp rice-wine vinegar
  • 1 tbsp lime juice * about ½ lime
  • One tbsp soy sauce
  • 1 tbsp finely grated fresh ginger
  • 2 tbsp allulose

Salad

  • 12 oz cabbage Finely shredded
  • ½ fennel bulb * thinly sliced (bulb)

The stalks and fronds are great in this salad too if your fennel bulb came with them.

  • 1/4 cup carrots shredded

I know, I know.

The Keto Cops are going to say that carrots “aren’t low carb”. You can omit this ingredient if you are uncomfortable with the three extra carbs this nutritious veggie adds to the salad. No biggie.

But you might want to check out their benefits (in small amounts of course), before you entirely write off this vitamin powerhouse.

  • 2 green onions thinly sliced – white and green parts

Use the whole thing to get all of the great flavor that green onions bring to the proverbial table.

  • 4 radishes * optional thinly sliced
  • salt and pepper to taste

Optional Garnish

  • Sesame Seeds garnish
  • Cashew Pieces

This ingredient lends this slaw some delicious nuttiness.

  • In a medium bowl, whisk together all of the dressing ingredients and set aside.
  • Slice all of the veggies and toss together.
  • Add dressing and toss. Season with salt and pepper, sprinkle with sesame seeds and serve.
