Holy smokes this Low Carb Bacon Onion Ring Recipe is a sweet and spicy explosion of flavor. Eat them as an appetizer, snack or on top of a juicy burger.

They’re fun to make and that’s a good thing since they’ll disappear lightning fast. Remember when you told friends you were going low carb and they felt sorry that you wouldn’t get to enjoy “treats” anymore?

Those same people are going to ask for your recipe!

Served Bacon Onion Rings

🥘Ingredients:

  • 12- 15 Rings of onion – doubled rings about 3-3.5 inches across & 1/3 to 1/2 inch thick. See photos in the instructions before you start slicing your onions.
  • 1 pound bacon – Having a bit of extra bacon on hand is good the first time you make these.

You’ll get the hang of it pretty quick. But the first batch might feel tricky.

  • ¾ cup Allulose * or preferred low carb sweetener. Allulose is great because it gets a little bit sticky and caramelizes.

OMG…so good.

I used a spicy Indian Chili powder because we like a lot of heat. The half teaspoon of cayenne is a medium / hot version so you can add or subtract the heat according to your own needs.

👨🏿‍🍳How to Make the Onion Rings:

1.) Prepare 2 sheet pans with a layer of parchment. In a pie plate or wide bowl, whisk together the allulose, cayenne pepper, granulated garlic until combined. Do not pre-heat the oven.

Make sure the parchment overlaps the edges of the baking sheet so that caramelized allulose doesn’t run onto the pan. It’s like cement when you are trying to clean up. Just save your self the hassle.

2.) Slice your onions so that you have about 15 double slices of onion rings like in the photo. Reserve the leftover onion for another use.

If you want large onion rings, only cut about 12 rings.

The smaller (3 inch to 3.5 inch wide and 1/2 inch thick) rings tend to hold their shape better than huge rings.

3.) Preheat oven to 375°F or 190°C

4.) Take one slice of bacon and gently stretch it without breaking it. Hold one edge of the bacon against a double onion ring and wrap it around the onion, just barely overlapping the bacon by about ⅛ of an inch. Overlapping should be kept to a minimum.

If needed, use a second strip, or a partial strip to finish wrapping the onion. No or very little onion should be showing if possible. The better the ring is covered, they crispier it will be.Larger rings will need more than one strip of bacon.

5.) Use a toothpick or two to secure the ends of the bacon to the onion. Place the bacon wrapped onion ring in the bowl of sweetener mixture.

Dip, flip and use a spoon to sprinkle the mixture over the onion ring to ensure the entire thing is covered generously. Place on the parchment prepared pan. Don’t let the onion rings touch. They need space to get crispy.

6.) Repeat with the remaining bacon and onion rings. Bake for 25 minutes before gently flipping the Onion Rings. Bake for another 20 to 30 minutes, or until the bacon is crispy and deeply colored. Transfer to a plate lined with a brown paper bag or something similar. Cool in a single layer for at least 5 minutes to crisp further before serving.

IMPORTANT!!!! If you don’t have a brown paper bag or something similar, let the onion rings drain on a plain plate. If you line the plate with paper towels they will stick and you’ll end up eating paper.

7.) Serve warm with the low carb sauce of your choice.

Can I make these ahead of time?

They are best fresh but can be stored in the fridge for 2-3 days if needed.

For best results, reheat them in the air fryer or oven. The microwave can be used but I don’t know if the onion rings will get chewy.

My onion rings are floppy!

If your onion rings are floppy it might be a result of not cooking long enough. Or, the temperature of your oven was too low.

Ovens vary and next time you make them turn up the heat a little bit higher.
