A sweet pink drink with glorious champy bubbles, perfect for any brunch. Cold and classy - a sure to hit with the ladies. Make one or quadruple the recipe for friends. Just use the slider in the recipe card to adjust.
Combine the Allulose, water and lavender in a small saucepan. Bring to a boil over medium-high heat and stir occasionally for 2-3 minutes, Remove from heat, cover and let steep for 5 minutes. Optional: strain out lavender before storing in a glass jar in the fridge. If you want a deep purple color, add one drop red and one drop blue food coloring. Allow the syrup to cool before using.
Make the Mimosa
In a champagne glass, add the lavender syrup and fresh squeezed grapefruit juice. Stir to combine. Pour four oz of Prosecco over the top and stir.
Add a sprig of lavender or Grapefruit wedge or twist to the top of the drink and serve.
