Low carb frijoles refritos is a Keto friendly recipe with healthy Black Soy Beans as the star of the show. They are the perfect low carb - high fiber ingredient because they pick up whatever flavors you add in (just like any bean). If you miss beans, this recipe will be a welcome addition to your low carb arsenal.
Rinse beans if using canned Black Soy Beans. If starting with dried beans please see post for cooking times.
Chop raw bacon into small pieces and fry in a large pan until crispy. Do not discard grease.
Turn off heat to avoid splattering. Carefully, add beans and all other ingredients to the pan.
Use immersion blender in the pan to puree beans. Be careful, the pan is still hot.
Turn burner back on to medium/ low to start cooking the water out of the refried beans. Cook until desired consistency (usually about ten minutes). Remember that they will continue to thicken as they cool.
Serve with desired topping or store in an airtight container for 5-7 days.
