This creamy (healthy) alternative to traditional mashed potatoes is a hearty side for any main dish. I am not going to say it tastes "just like" mashed potatoes because it doesn't. But it's a clean and delicious side that will fill the mashed potato void none the less. See the post for alternative spice ideas and serving suggestions.
Place the cauliflower in a microwave safe dish with a lid on high for 8 minutes, or until soft. Remove from microwave and take off the lid to let steam escape. You want the cauliflower to dry out a bit. See the post for tips.
Transfer the cauliflower and all ingredients except bacon and cheese in a food processor or blender. Pulse until smooth and salt and pepper to taste if you need to. Add almond milk or heavy cream one tbsp at a time if you need more moisture to get it smooth.
The texture should be smooth. Transfer to an oven safe serving dish or six ramekins. Top with cheese and bacon. Broil for a couple of minutes to get a nice golden crust (watch it closely). See post for alternatives and tips for baked cauliflower mash (yum).
