This simple method will help you make the best prime rib roast you have ever had. I know that's big talk but this recipe is out of this world fantastic and you'll be proud of the results. It's so much easier than most people think.This is a specific method for achieving a juicy prime rib that sits at just a shade under medium rare. This works best and is easiest with newer ovens that have digital temperature settings.

Instructions
Remove the Prime Rib Roast from the package and pat dry.
Pour melted butter on all side of the roast using a brush if necessary to make sure the roast is coated.
Mix all of the spices in a bowl and then rub them into the roast. Massage the spices into the meat. Cover with foil and let rest on the counter 4 hours before you need to start cooking.Yes, leave the roast at room temp for four hours.
Preheat oven to 500°F or 260°C . Make sure your oven preheats all the way before adding the roast.This is KEY.
Put the uncovered prime rib roast in the oven, fat side up and bake for 20 minutes exactly. See post for timing if your roast is larger or smaller than 4 pounds.
Turn off the oven at the 20 minute mark to rest - DO NOT OPEN THE DOOR! Let the roast sit in the oven for 30 minutes without being disturbed. Just wait and do nothing during this 30 minute time.
Then, turn oven back on to 275°F or 135°C to slow roast for 90 minutes. DO NOT OPEN THE DOOR TO PEEK. If your oven is hotter than 275°F the oven will not turn back on until it cools to below this temp. This is normal and what is supposed to happen.This will make for a perfect (just under) medium rare roast. Take out 10-15 minutes earlier for very rare meat. ( I don't recommend this but it's your steak ;))
Slice and serve with horseradish and au jus if desired. See post for link to simple au jus recipe instructions.The outside slices will be darker and the center will be warm and pink. This way, everyone gets their favorite!
