Instructions
Fry the onion, and garlic in oil for a couple of minutes over medium heat in a nonstick saucepan. The onion should become translucent. Do not brown.
Add vinegar, tomato paste, bay leaf, spices and canned tomatoes.
Stir and lower the heat. Simmer over low for about 20 minutes. Remove the bay leaf.
Let cool for a few minutes and blend until smooth. Taste and add more salt, fresh ground black pepper or vinegar as needed.
Depending on how thick you want your ketchup to be, you can let it simmer longer over low heat. Store in the fridge for 10- 12 days or do a canning bath to preserve.
