This low carb faux potato salad will amaze you. Seriously...it's ding-dong-delicious and tastes like real potato salad. Yes, it's made with radishes but hear me out before you click away...I am a confirmed radish hater and I love this. Boiling radishes rids them of their funky, bitter taste and you are going to LOVE this if you have gone low carb and miss this traditional, Summer comfort food. I swear it is freaking fantastic.
1/4cupgreen onions ( about one small bunch)or to taste
1/2cupCelery thinly Sliced
6slicescrispy baconcrumbled
1/2cupmayonnaise
1/4cupmustardor to taste
saltto taste
pepperto taste
Dill Pickle* optional and to taste
Instructions
Quarter the radishes. Or cube if they are very large.
Boil the radishes in salted water for 20-40 minutes. ( Or until fork tender)
Rinse the radishes off in a colander under hot water. You'll need to make sure you get rid of all of the "radish" taste. Drain and let them cool in a single layer in your colander for 10 minutes. ( This will help dry them off).
Add the remaining ingredients and combine.
Serve and enjoy or IMMEDIATELY store in the fridge for 3-4 days.
