Drop two tablespoons of batter for each biscuit onto an oiled parchment covered cookie sheet for each biscuit ~ making twelve small biscuits spaced 2 inches apart.
Bake int he oven for 12 minutes or until brown.
Start your gravy while the biscuits are baking.

While you are waiting for your biscuits to bake ~ add the butter to a medium sauce pan.
Brown the sausage in the butter. Let it get browned. Those little browned bits are key in the gravy's taste.
Add the milk, cream cheese and Xanthan gum if using. ( see the tips above the recipe card)
Add pepper and let simmer until cream cheese is melted and the gravy thickens while you are waiting for your biscuits to bake.
Put it all together...
Break open two biscuits and ladle 3/4 cup of gravy on top.
