Crispy fried sausage that envelops a hard or soft boiled (shelled) egg. This dish is a popular British pub or picnic food that's commonly served cold. We have fallen in love with this dish and serve it hot for breakfast, snack or dinner.
4eggsSoft or hard boiled and peeled. See post for tips.
1/2cupParmesan*grated and the powdered kind in the green can is perfect in this dish.
1/4tspred pepper flakes*optional if you like a kick
Instructions
Hard boil (or soft boil) eggs and peel.
In a large mixing bowl combine sausage and all spices. Mix until everything is well combined. Shape mixture into four flat patties that will be large enough to wrap the eggs in (5 inch diameter aprx).
Place eggs on each sausage patty and shape sausage around egg. Carefully roll each patty in the Parmesan cheese to cover completely, pressing lightly. See post if you are using shredded Parm.* IMPORTANT
Arrange eggs in air fryer basket. Spray lightly with olive oil. Set air fryer to 400°F for 25 minutes. Halfway through cook time, turn eggs and spray with more olive oil if needed. Check to make sure sausage is at least165F all the way through.
Serve immediately with coarse ground mustard, greens, toast or whatever you like..
