This lower carb version of classic French Onion Soup is rich and delicious. It's a gorgeous, steamy blend of strong flavors and cheesy toast. This is healthy comfort food at it's lower carb best.
4ozGruyere * or parmesan & fotina -sliced or shredded.

Instructions
In a large stock pot, add butter and saute sliced onions for about 10 - 15 minutes. Add a few tablespoons of broth when the pot starts getting dry and the onions start to brown too fast. It takes up to 15 minutes more to get nice and caramelized.
Once the onions have caramelized, add the garlic and saute for 30 seconds or so to soften.
Add the wine and broth. Scrape the bottom of the pan with a wooden spoon to deglaze.
Add bay leaves and all other spices. Bring the soup to a boil, then reduce heat to a simmer for 20 minutes or until reduced to your liking. The broth will be rich and fragrant.
Make the bread while your soup is cooking and toast it in a pan with a dab of butter while you are waiting for the broth to reduce
Set your oven to broil.
Divide the soup into oven safe bowls and place them onto a sturdy baking sheet. Top each bowl with a slice of low carb bread, and top with 1 oz cheese. Place under the broiler for 2-4 minutes, until cheese is browned and bubbly.
Serve hot on top of saucers so that you don't burn your table (or hands). The bowls will be hot! Keep leftovers covered and chilled for 2-3 days.
Notes
The nutritional info for this recipe is based on making 4 servings. Onions are not as naturally low carb as many other veggies but many people can still fit the 12 NC into their daily macros and stay in Ketosis.
