A doughnut is coffee's best friend. And you don't have the miss that just cause you're Keto. These Keto Cinnamon Doughnut Muffins are perfect with coffee. Easy to make and everyone will love them.
Preheat Oven to 350°F and line a 12 well muffin pan with liners.
Melt 1/3 cup of butter, in a small bowl in microwave.
Add melted butter and the rest of the wet ingredients to a mixing bowl and mix. Stand mixer or hand mixer is recommended.
In a separate mixing bowl, combine all of the dry ingredients.
Slowly add the dry ingredients to the wet ingredients and mix until completely combined into a dough/batter. Do not over mix lest you end up with flat dense muffins.
Evenly fill each well of the muffin pan and bake at 350°F for 20-25 minutes. Cool for at leat 10 minutes before topping.
Optional Cinnamon "Sugar" Topping
Combine the cinnamon & granulated sweetener of your choice (we recommend allulose)
Melt 1/4 cup butter
Paint the top cooled muffins with melted butter, then dip the buttered part in the cinnamon "sugar" mixture.
