Boil a cup of water. I usually do this in the microwave.
Grease a 4" X 8" bread pan
Put all of the dry ingredients in a large mixing bowl and mix thoroughly. Make sure there are no clumps.
Add the egg whites, vinegar and oil to the dry ingredients and mix just until combined completely. Not too much, you don't want to overmix this.
Add the boiling water to the mix and mix well. again don't over mix. This should result in a dough ball.
Remove the dough ball and form it to fit in the bread pan sort of evenly. It will be a little uneven with some gaps around the edges. That's okay.
Put it in the oven and bake for 80-90 minutes at 350°. It is done when the internal temp is between 200 and 210.
When the bread is done cooking, cool in the pan on a cooking rack for 10 minutes or so, and then remove from the pan and cool completely on the rack without the pan.You may want to put it back in the oven for a few more minutes with out the pan to crisp the crust and dry the bottom of the loaf.
