Fry six slices of bacon until they are extra crispy. I do this by putting them is the oven at 350°F for 35 minutes. but you can fry them on the stove or use the microwave if you like.
Pre heat oven to 400°F.
Soften cream cheese and mozzarella by putting them together in a microwave safe bowl and microwaving on high for 1 minute. Mix until combined.
Put almond flour in a mixing bowl and use a fork to smash all of the clumps.
Add the rest of the dry ingredient to the almond flour and mix thoroughly.
Add the cheddar, softened cheeses and eggs to the mixture and mix until combined. Save a little bit of the cheddar to sprinkle on top before baking to make them look gorgeous.
Use an ice cream scoop to make round rolls in a cast iron pan. You can use a regular cookie sheet if you don't have one.
Bake at 400°F for 20 to 25 minutes. Until golden brown.
Remove and enjoy hot or cool on a baking rack for later.
