EASY SLOW COOKED 

MEDITERRANEAN LAMB

–3 lb Leg of lamb roast – 2 teaspoon Salt – 1 teaspoon Black pepper – 2 tablespoon Olive oil  – 10 garlic cloves – 2 teaspoon rosemary dried – 1 teaspoon thyme dried – 1 cup Red Wine – 2-3 bay leaves – 1 Onion Sliced2  Celery Sticks

Step 1

Trim the thick outer fat and elastin from the lamb.

Step 2

If time allows let lamb set on the counter for 1 hour, until it is room temp. If not, continue.

STEP 3

Pat lamb dry and season generously with salt and black pepper, getting into all of the crevices.

STEP 4

Coat the bottom of a large skillet with olive oil, cast iron is ideal.

STEP 5

Rub the rest of the spices into the lamb with your hands.

STEP 6

Add Onion, bay leaves, carrot and celery (if using) to the bottom of a large slow cooker (crock pot).
