– 4 Mahi Mahi Fillets
– 2 Tbsp Butter
– Salt and pepper to taste

Sweet Mustard Cream
– ¼ cup Whipping Cream
– ¼ cup Mayonnaise
– 2 tsp Dijon mustard
– 2 tsp allulose
– ½ tsp Tarragon dried
Beat heavy cream in a bowl until stiff peaks form.

In a separate bowl mix the mayo, mustard, allulose and tarragon well. Then fold gently into the whipped cream until just blended and refrigerate until ready to serve.

Mahi Mahi
Heat a frying pan and butter over medium heat until hot and the butter bubbles. Sear the Mahi Mahi filets for about two minutes on each side.

Place the fish fillets on a warm plate and dollop with sweet mustard cream sauce. Serve any extra sauce on the side.
