Ingredient

Season chicken with salt and pepper.

STEP 1

Heat olive oil in a large skillet over medium-high heat.

STEP 2

Cook chicken for 6-8 minutes on each side or until golden brown and cooked through.

STEP 3

Add butter to skillet and sauté onion and garlic until softened, about 2-3 minutes.

STEP 4

Add chicken broth, heavy cream, sun-dried tomatoes, and Parmesan cheese to skillet. Stir to combine and bring to a simmer.

STEP 5

Add baby spinach and return chicken to skillet.

STEP 6

Cook for an additional 2-3 minutes or until spinach has wilted and sauce has thickened. Serve hot.
