Instructions
Add the heavy cream, almond milk, erythritol, xanthan gum to a medium saucepan.
Heat over medium heat, stirring frequently, until the mixture comes to a boil.
Remove from the heat. add the vanilla extract and pour into a high-powered blender.
Blend until smooth.
Pour into an ice cream maker and churn according to the manufacturer’s instructions.
Serve immediately or store in the freezer for later.
