Thick and creamy sharp cheddar and tender broccoli are a match made in Keto heaven. I doubt this soup needs any introduction. It will keep your Ketosis fires burning and it's a family favorite. Picky teen approved.
3cupsbroccoliChopped into small pieces. Use a food processor to make this bit go faster or use frozen chopped broccoli (fastest).
1cupheavy whipping cream* Almond milk works but it will not be as creamy.
3cupsshredded Cheddar cheese* Any kind you like. Sharp is our favorite.
4slicesbacon* Optional- chopped and cooked
salt and ground black pepper to taste
Instructions
Add butter, broth, broccoli and spices. Bring to a boil; simmer until broccoli is tender, about 15 minutes.
Add heavy cream & Cheddar cheese gradually. DO NOT BOIL ONCE YOU ADD CHEESE AND CREAM. Just a low simmer is enough.Stir constantly, until completely melted. Season with salt and pepper to taste. If too thick add more cream. Too thin? Add more cheese.
