First,make a meat filling.. You can use whatever you like to eat in tacos. Or look at our pork carnitas recipe on the site. It's perfect for tamales.

But this story is about making the masa for the tamales, and then building them. There is a video of the whole process on the post to help...

Next, Gather your ingredients.

Make Sure you have everything before you start..

You'll need: – Meat filling – Almond Flour – Psyllium Husk Powder – Mozzarella – Fat of choice – baking powder – Corn Extract – Broth – Corn Husks

You'll also need: – A big pot - Tamale steamer (I'll show you what to do if you don't have one)

Soak the corn husks....

After you make the dough you'll fill the tamales with meat.

Then roll them up and steam them.

Let cool slightly before serving.

Store in the fridge or freeze for later...
